red vines are situated around its cellars and
on the limestone plateau of Camaradon, covering
a surface area of 11 ha comprising:
Cabernet sauvignon 5 ha
Merlot 5 ha
Tannat 1 ha
We vinify and process the red vines as we do the
white, according to grape variety and individual
needs. No year is the same, and the length of
time the wine spends in the cellar is therefore
adapted to the nature of the juice so that fruit,
fat and tannins are able to fully express their
finesse and suppleness.
One part of Merlot
is used to vinify for our PRIMEUR
WINE. It has a nose that is reminiscent of
red fruit, a supple palate and gourmet structure,
and is a pleasing wine that should be drunk with
fire-grilled dishes.

The Cabernet
We use a more classic technique when vinifying the
MERLOT to
achieve a fruity, supple and delicate varietal wine.
It is at its best when drunk at 18° with chicken,
grilled food or cold cooked meat.
The
CABERNET SAUVIGNON is a rich wine that
is dominated by aromas of well ripened red fruit
and flavours of kirsch. It is a fat wine with
predominating tannins that mellow overtime. Our
CABERNET may be kept for between 3 and 5 years
and marries perfectly with duck dishes.
The Tannat
TANNAT wines
are typical to Gascony. It is a powerful, gravelly
wine, with noble aromas reminiscent of leather
and chocolate, that blossoms after 12 to 14 months
spent maturing in casks.
Its tannins smooth away and the wine becomes more
voluminous and complex. It is a beautiful vin
de garde (for ageing), which when drunk
young is a fine accompaniment to rich, slightly
fatty, spicy dishes.
When it has had time to mature, it should be drunk
with a cut of beef, a stew or wild game.
The Domaine
des Cassagnoles
The only blended red wine is the DOMAINE
DES CASSAGNOLES; Merlot, Cabernet and a
little Tannat in a harmonious blend. It may be
left to mature between 3 to 6 years, according
to its year. It is a fine meal accompaniment,
from starters to cheese..
We
advise you to open bottles of our red wine at least
one hour before serving.
We also have a bag-in-box blend: cuvée
Jean CARDEILLAC - a pleasant supple, structured
and fruity wine.
