The various grape varieties are harvested and
vinified separately, and the individual characteristics
of each are respected. Skin maceration is used
wherever possible and all of our white wines spend
several days in a cold tank for stabilisation
to strengthen their pre-fermentative aromas. Following
pneumatic pressing, the juices are separated and
fermentation takes place under controlled temperatures.
The wines are tasted every day so that their quality
may be closely followed.
The Colombard
Our Colombard is very aromatic, fruity
and refined. It is a dry white wine that is both
tonic and refreshing. It should be drunk chilled
(8°) and should not be left to age.
It is a wine that may be appreciated throughout
the day and it is a fine accompaniment to oysters,
mussels and all fish, shellfish and seafood dishes
and also cold cooked meat.
The Colombard was the first bottled wine
to be produced at the estate.
It is regularly shortlisted in the press and has
received a large number of awards over the last
25 years, notably 3
"Coup de cur" in the Hachette
Guide and, in 2005, a GOLD medal at the
'Concours Général Agricole' held
in Paris.
The Gros
Manseng Selection - dry, medium,
sweet
or matured in oak casks
The Gros Manseng
produces fleshier, more ample wines with fruity
apricot and pear aromas. It is a lively wine,
but not to excess, with a persistent final. It
may be kept for several years and should be drunk
chilled, at a temperature of 10/12°. "
Gros Manseng Sélection " is
a dry wine, and the perfect accompaniment to cooked
fish. "Gros Manseng
Medium" is a semi-dry wine that is
perfect as an aperitif or with foie gras. It may
be kept for between 5 and 6 years. Our Sweet
Gros Manseng is only
produced during exceptional harvests. It is a
very elegant wine that may be kept for between
10 to 15 years. The 2003 vintage received a Silver
medal at the 'Concours Général Agricole'
held in Paris, in 2004, and was elected 'Cépage
d'Or' in the same year. The "Gros
Manseng matured in oak casks"
is a powerful wine with vanilla aromas, which
develop over time. It is a vin
de garde (wine for ageing), but which may
also be drunk young with blue-veined cheese or
spicy cuisine.
The Chardonnay & the Chardonnay matured in oak casks
The Sauvignon
The Chardonnay
is a delicate and very fine wine. It should be
drunk rapidly. It goes well with creamy or grilled
fish dishes and cooked cheeses. Chardonnay
vinified in casks: a beautiful golden colour,
a toasted scent, an ample palate; this wine is
both well-balanced and elegant. It marries perfectly
with smoked fish and cold cooked meat.
The
Sauvignon has a floral aroma with
a mineral note. It should be drunk chilled
(8°) with oysters. It is with the Sauvignon
that we make our PRIMEUR
WINE. Vinified at a very young age,
it is dominated by fruit.
It is a very pleasant, gourmet wine, rich
in fatness and finesse. It should be drunk
rapidly, with walnuts or chestnuts, among
friends.
